Abstract:This article deals with the changing food production and consumption system (hereafter as: c-s.) of yogurt in the United Kingdom (U.K.), focusing on the environmental (here as: env-al.) impact of the yogurt processing stage from a technological (as: tech-al.) perspective. Explored is the future of the yogurt production (as: y-prdn.) and c-s., considering the env-al. implications of increased production of more differentiated yogurt products and how tech-al. change can possibly mitigate some impacts. It is revealed that to appreciate the env-al. impact of the yogurt industry, policy makers should focus on the primary stage of production and also on all stages of the y-prdn. and c-s.
