Abstract:This article proposes that employee-focused research should investigate the possibilities for employment upgrading in market sectors that have traditionally been characterized by poorer job quality. A case study on dairy processing industry in UK and Ireland is conducted to investigate the matter. The findings of the article reveal that the emergence of differentiation-focused market segments results in better job quality in numerous companies. However, low-wage and low-skill employment still remains prominent.
