Abstract:Sales of salad dressings and vinegar are influenced by a number of factors, including healthy eating trends, the increasing sophistication of the British palate and the seasonability of salad consumption. The market for salad dressings grew by 24% from 70m pounds in 1989 to 87m pounds in 1993. The most dynamic sector has been mayonnaise, which accounted for 46% of salad accompaniment sales in 1993, compared with 34% in 1989. the growth in sales of reduced calorie products has been a feature of the mayonnaise and salad dressings sector.
