Abstract: | The study examines the challenges of labour scheduling. The goal is to balance the need of staff avoiding the problems of overstaffing and understaffing and at the same time to maintain the service quality and limit labour costs. The study is based on the Korean restaurants who find the labor scheduling as an unattainable challenge. In the study the labor scheduling model is presented to solve the staffing problem. As a result of the IP-generated way of doing the schedule the overall labour costs were reduced and the appropriate service level ensured. |
