Abstract: | The purpose of the paper is to test and calibrate a surmise that reducing dinning duration has benefits for revenue. The study is based on simulation over twelve hundred restaurant scenarios. The findings show that the revenue bump is less than one-quarter of the amount predicted by surmises. |
