Abstract:The survey report examines the retail market for Spanish dairy products. For the purposes of the analysis, dairy products are divided into four broad sectors: milk including milk shakes, butter, cheese and cream. Milk and cheese are regarded as staple foods as they form an essential part of the Spanish diet. Cheese is a popular snack food. Butter and cream play a less important role. Cream is regarded as a seasonal product, usually consumed during the summer months with fruit. Consumption of butter is limited by oil for cooking and by margarine as a spread. Butter also suffers from a negative image of being high in fat and cholesterol.
