Abstract:The Spanish bakery products market is divided between freshly produced and industrially produced products. Freshly produced products from small bakeries dominate this market. The total Spanish bakery products market is contracting due to the overall fall-off in bread consumption. Wrapped bread is increasingly purchased because it lasts longer. Per capita consumption of cakes and buns grew by 27% to 9kg between 1987 and 1991. Euromonitor forecasts that sales of sweet bakery products will increase by 54% to 541,000 tonnes between 1991 and 1996, and at constant 1991 prices the total Spanish bakery products market will decline by 9% to Ptas 745 billion by 1996.
