Abstract:This report analyses the market for consumer foodservice in France. The market comprises all stand-alone restaurants and eating establishments in which the consumer can freely choose to eat. It also includes units in semicaptive environment such as hotels, and leisure, travel and retail establishments where, as a result of contractual agreements negotiated by the management, customers' choice of units is limited to some degree. The consumer foodservice market has been broken down by location, by sector and into chained / independents. In order to avoid double counting, consumer foodservice units broken down by location fall into only one of the following five categories: stand-alone, hotels, retail, leisure, travel.
