| Abstract: | The paper introduces a number of restaurant -configuration measurements that must be taken into account when determining which and how many tables should be combinable. A simulation model indicates that the best table configurations are those that allow long sequences of small-size tables to be combined. Knowing the number of different-size combinable tables to have on hand is by far the most important determinant of capacity optimization. |
