Abstract: | The UK retail market for meat and poultry is examined, including added value products sold from the chilled cabinet and cooked meats. Frozen primary meats /frozen poultry, lamb, beef mince etc./ are included but value-added convencience products are not included nor canned meats. Market value fell by 3p.c. in 1991 to GBP 7 million. Volumes are down by 1p.c. to 2.2 million tonnes. Sales of all primary meats have declined. In 1991 continued volume decline was compounded by weak prices and trading down. Red meat accounts for 43p.c. of volume sales, with beef the largest sector. The poultry sector has benefited marginally from a trend to white meat. Lamb has overtaken pork as the second largest red meat. Figures of the market are tabulated. |
