Abstract:The share of food and drink in total consumer spending has continued to decrease in the Netherlands. In volume terms, expenditure on food and drink rose on average by less than 2 percent per annum. At the same time leisure spending rose on average by over 2 percent per annum in volume terms. Disposable income has risen on average 2.6 percent per annum; in volume terms, it has risen by 3 percent per annum since 1986. Close to 40.000 catering outlets can be identified in the Netherlands. Consumer catering turnover from meals is estimated at DFL 530 million in 1991 (retail catering excluded). Sales of fast food outlets are estimated at around DFL 530 million in 1991, and increased by 40 percent since 1987.
