Abstract:In 1996 the market for canned vegetables amounted to 387,000 tons, worth 321 mn pounds. In-home consumption of canned vegetables has been in long-term decline, as consumers have increasingly preferred to purchase fresh or frozen produce, which they perceive to be healthier. The decline appears to have been stemmed, as volumes increased by 9% in 1995 and by a further 5% in 1996 to reach 387,000 tons. Market value increased by 19% between 1994-1996 as a result of increased volumes, as well as growth in the market for premium products. Despite the upturn in sales, the market is unlikely to witness any major growth without investment by the industry and retail sector in raising its profile.
