Abstract:At present, China's consumption of vegetable is characterized by the following: The consumption of urban residents is higher than that of rural ones. But compared with the 1980s, the gap between urban and rural area has been narrowed by 56.2%. In addition, the consumption quantity and quality of high-income residents are larger and better that those of low-income ones. There also exists regional disparity in consumption of vegetable. The rapid development of vegetable production and diversification of varieties of consumption lead to the downward trend in per capita consumption of vegetable. As a result, aggerate supply has exceeded aggregate demand, forinstance, by 78.81 million tons in 1997. Such a trend will continue this year. But some famous quality, special and new varieties of vegetable can not satisfy the demand.
