Abstract:This survey article deals with the market for yellow fats, incl. butter, dairy spreads, reduced-fat and low-fat spreads, spreads containing polyunsaturated and monounsaturated fats, soft margarine and packet margarine. The UK market is valued at £860 mn in 1998. Butter accounted for 36 % of the market value, with dairy spreads taking 24 per cent, low and reduced fats 17 per cent, unsaturated fats 16 % and margarine 6.5 per cent.
