| Abstract: | The article analyzes and compares four task scheduling procedures and their effects on the performance measures, such as labor use and makespan in a university cafeteria's kitchen. A simulation model and analysis of variance are employed to find out if main effects, such as operation days/menus and dispatching rules result in improved performance measures. The findings reveal that all main effects and the interaction effect between days/menus and dispatching rules are notable on labor use. |
