| Abstract: | Science is used to define the mechanisms and to develop new scientifically substantiated foods. As an example of the process, we can monitor two cases, Finland and Japan. Health foods are on the market to stay, growing as a product group. The market is relatively embryonic and challenging with confusing definitions, claims and lack of European legislation. |
