| Tiivistelmä: | The article analyses the impact of technology and market development on the bakers' and butchers' trades. The overall number of bakeries dropped to a third between 1960 and 1986, its breakdown into small business and industrial bakeries remained fairly constant. In the butchers' trade the share of supermarket departments rose against traditional shops. The trade is divided into a number routine activities. |
