Tiivistelmä:Following a period of declining volumes, the cheese market witnessed an upturn in consumption of 3% in 1992 and a further 0.6% in 1993, to reach 271,000 tons. Market value has risen at a higher rate than volume, as a result of higher raw material prices, as well as a trend towards added value products. The market rose by 12% in 1992 and by 9.3% in 1993. While Cheddar continues to dominate cheese sales, accounting for 56 % of sales volume in 1993, it is gradually declining in importance, chiefly in favour of soft and processed cheese.
