Tiivistelmä:Yellow fats form a very substantial grocery market, with a value of 812m pounds in 1993, comparable in size to cereals. The market is in modest volume decline. There is a long term decline in butter consumption but polyunsaturated margarines/spreads and low fat spreads have taken up most of what butter has lost. Market development has been driven by health and convenience (spreadability) but the health factor is becoming more complex. Sales volume will continue to decline at 3-5% a year.
