Tiivistelmä:Pork accounted for 13% of total meat consumption in 1993 behind poultry, with 37%, beaf and veal, with 21%, and bacon and ham, with 17%. However, pork has been the least affected by the decline in red meat consumption, with a fall of 9% between 1989 and 1993, compared with a 21% decline for both beef and veal, and lamb and mutton, and a 12% decline for bacon and ham. Consumption of pork declined form 267,000 tons in 1989 to 243,000 tons in 1993. It owes its relative stability to competitive pricing relative to other meats, to the increasing leanness in its cuts, and thus its healthy attributes, and to its versatility.
