Tiivistelmä:This report covers speciality sauces. The market amounted to 8,500 tons in 1996, valued at 36.4 mn pounds. Sales volume grew by 52% between 1992 and 1996 and value by 64%. Speciality bottled sauces accounted for 8% of the total bottled sauces market by volume but for 20% by value in 1996 as a result of the premium nature of the products. Current trends in eating patterns will continue to provide a cahllenge for bottled sauce manufacturers The long-term shift away from formal eating occasions and traditional meat and two vegetable meal styles towards the greater use of meat, poultry and fish in ready-prepared cooking sauces and stir-fry sauces, will inevitably reduce the number of opportunities for using bottled sauces, but on the other hand the long-term trend towards convenience food use should continue to benefit speciality table sauces.
