Tiivistelmä:The report covers the 1992-1996 period and studies the Italian retail market for foods preserved by sterilisation or pasteurisation and then canned. Discounters slashed the prices of many canned foods during the period, reducing them to cheap commodity products in the eyes of consumers. Vegetables are the most important broad sector, including cannec tomatoes. The vegetables sector in particular has seen a profileration of private label products. Vegetables were the most dynamic sector over the period demonstrating innovation in canned tomatoes with new chopped and seasoned varieties. The canned meat sector underwent the most dramatic fall in volume sales. The fish and seafood sector was particularly hard hit by an increase in the costs of oil and tuna. Canned food consumption totalled 763.000 tonnes in 1996, an increase of 12.2% over the 5 year period.
