Tiivistelmä: | This report analyses the market for contract foodservice in Italy. Contract foodservice is defined as designated contract/concession catering arranged by the management of a particular institution, service or business with an independent foodservice company in a business to business arrangement. The food preparation is carried out either on the premises of the institution, service or business, or off site and then brought to the site. Contract foodservice form part of the wider on-site foodservice market that includes in-house foodservice operations. Contract foodservice serves specific, captive populations around these institutions, services or businesses. They are not available to the general public but rather to the population located within the business, service or institution in which the foodservice outlet is located. |
