Tiivistelmä:This article examines restaurant management style and motivation of chefs in 36 restaurants that are ranked as having two or three Michelin stars. It is studied how the chefs become motivated to operate a Michelin-star restaurant, how costs and finances are managed, and what kind of impact the Michelin rating system has on business and financing.
