Tiivistelmä:The intent of the research described here was to determine how customers react to several demand-based-pricing strategies in the restaurant industry. Specifically, the authors examined perceived fairness of the following demand-based approaches: 1) differential lunch-versus-dinner pricing, 2) differential weekday-versus-weekend pricing, 3) time-of-day pricing, 4) coupon pricing, and 5) table-location pricing.
