| Tiivistelmä: | A learning curve model is extended to typical food service operations performed at several American military facilities in the USA and abroad. The model and the extent of its empirical support are reviewed. The empirical findings on the parameters of the learning curves for food service operations are reported and assessed. An actual application of the model to a bidding and manpower planning situation is described. The results serve to demonstrate the existence and relevance of the learning phenomena in service environments, an area so far neglected in the literature of learning curves. |
