Tiivistelmä:Based on an econometric analysis of the data obtained from the investigation of households in the province of Taiwan and the mainland of China this paper proves social development and urbanization as the two most important factors influencing food consumption. It points out that the changes in life style and dietary habits occasioned by urbanization and the changing socioeconomic structural factors such as market development and job changes play a decisive role for the changes in food demand structure in China and will continue to do so. In forecasting the future trend of food consumption, we would tend to overestimate the role of income for food demand if we only took income and price fluctuations into consideration in neglect of the changes in socioeconomic structures.
