Tiivistelmä: | One reason for the high rate of failure in the food sector is that the determinants of sensory product expectations and product preferences are not often considered sufficiently. In the paper, factors having an influence on taste expectations and judgement are discussed. The focus of interest is on influence of sensory and hedonic expectations There is a bipartite processing model presented. The model examines the individual decisions made in purchasing food. It illustrates the origin and effect of hedonic and sensory expectations. |
