Tiivistelmä:French haute cuisine has long set the standard by which the high-end restaurant segments in Britain and Germany have evolved. The French have traditionally been dominant in culinary culture and this article investigates whether globalization has weakened France's position. The study focuses on British and German Michelin-starred restaurants, identifying the commonalities and divergences in the process of interaction between French, global and local influences. The study employs a qualitative method and all chefs with two or three stars in the two countries, 45 total, also had their cuisine analyzed.
